The starters hold an important role in Italian cuisine and are a must to whet the appetite.
Each region has starters that reflect local customs and traditions; at Ristorante La Baracca in Polignano a Mare, the culinary tradition is that of inland Apulia, with artichokes and other fried vegetables, friselle (crunchy toasted bread), as well as local cheeses and cured meats. Many varieties of local starters accompanied by a good glass of wine will prepare for the arrival of the main courses.
